Rembiga, in north Mataram on the old airport road, is the home of sate rembiga: small cubes of beef marinated in chilli, palm sugar and shallots, then grilled over charcoal until caramelised. Bu Ririn's is one of the best-known warungs on Jalan Dr. Wahidin, a short street lined with competing sate grills.
Beyond the signature beef sate, try sate pusut, minced beef and grated coconut wrapped around a stick, and sate hati (liver). Bebalung, a sour beef-rib soup, and plecing kangkung round out the meal, while the crispy fried aubergine (terong krispi) is a popular side. The beef sate is genuinely spicy; the chicken version is milder. The warung has a prayer room, clean bathrooms and a dedicated car park across the road.
Bu Ririn's sells vacuum-packed sate, about Rp 33,000 for ten skewers, which travels well as a food souvenir; order at least a day before your departure. It is also on GrabFood. Opening hours run from 08:00 to about 22:30 daily, and the restaurant is about 15 minutes' drive from central Mataram.
Message ahead in peak season: July, August and the Christmas holidays fill up fast.
